Mouth-watering Caramelised Banana Bread


Do you have a sweet tooth? Do you like bananas? And are you a fan of caramel? If your answers are YES, this is the recipe for you! Banana bread is one of the most common cafe foods in Australia, check out my version of caramelised upside down banana bread!

焦糖香蕉麵包

INGREDIENTS 材料

For the Topping 裝飾材料

• ½ cup Brown sugar 紅糖 半杯

• 3 tbsp Unsalted butter 無鹽牛油 3湯匙

• 3 Small bananas 細香蕉 切半

For the Banana Bread 香蕉麵包

Dry Ingredients

• 1½ cup Flour 麵粉 1½杯

• ¾ cup Granulated sugar 白砂糖 ¾杯

• 1 tsp Baking powder 泡打粉 1茶匙

• 1 tsp Baking soda 蘇打粉 1茶匙

• ½ tsp Salt 鹽 半茶匙

• ¼ tsp Ground cinnamon 肉桂粉 ¼茶匙

Wet Ingredients

• 1 cup Mashed overripe bananas 熟香蕉 1杯 搗碎

• 2 large Eggs 蛋 2隻

• ⅓ cup Coconut oil 椰子油 1/3杯

• ⅓ cup Milk 牛奶 1/3杯

• 1 tsp Vanilla extract 雲尼拿香油 1茶匙

For the Caramel Glaze 焦糖

• 2 tbsp Butter 牛油 2湯匙

• 2 tbsp Brown sugar 紅糖 2湯匙

• 2 tbsp Heavy cream 鮮忌廉 2湯匙

DIRECTIONS

1. Preheat the oven to 160 degrees C. Grease a 9 x 5 loaf pan.

2 . To start, sprinkle the brown sugar and butter inside the loaf pan. Put it in the oven for about 8 minutes. Stir the mixture until dissolved and spread evenly on the bottom of the pan. Place the banana slices on top of the sugar mixture.

3 . To make the banana bread, combine all the dry ingredients in a large bowl. Add all the remaining wet ingredients and beat just until combined. Do not over-beat. Pour the batter over the sliced bananas in the pan.

4. Bake for 1 hour or use a toothpick to test if the bread is ready, insert it into the centre of the bread, if it comes out clean with no streaks of batter, it is done. Allow the cake to cool in the pan for 20 minutes before inverting it on a cake platter.

5. To prepare the Caramel Glaze, microwave the butter, brown sugar and heavy cream in a small bowl. Remove from heat and let it sit for a minute. Pour the glaze evenly over the banana bread. Serve with vanilla ice cream.

1. 將焗爐預熱至攝氏160度,並將一個 9X5 英寸的麵包盤塗上牛油。

2. 將紅糖和牛油撒在麵包盤內,放在焗爐約8分鐘直至溶解牛油。將糖漿攪拌均勻並平均分佈在麵包盤底部,然後放一層香蕉(切面向下)在糖漿上面。

3. 將所有乾的材料混合,再加入餘下濕的材料攪拌均勻,將麵包糊倒在香蕉上。

4. 將麵包在焗爐中焗1小時,或用牙籤做小測試。將牙籤插入麵包中間,如果牙籤拿

出時是乾身,即麵包已完成。讓蛋糕在盤中冷卻20分鐘,然後將其上下倒轉放置在蛋

糕架上。

5. 準備焦糖,將牛油、紅糖和放在微波加熱一分鐘,讓它坐一分鐘。將香蕉麵包,然

後將焦糖均勻地倒在香蕉麵包上,建議配上雲尼拿雪糕
